There are a number of varieties of this Lettuce that have been adapted to various light and temperature conditions.

Keeping Qualities:

Ethylene: During the natural ripening process, an Iceberg Lettuce will produce little ethylene. The aging process of Iceberg Lettuce is moderately affected by exposure to ethylene.

Moisture Maintenance: Approx. Water Content: 96%
Through maintaining a cool and moist environment it is possible to maximize shelf life.

The ideal storage conditions are 90-95% RH @ 0°C where the Iceberg Lettuce should last up to about 15 days.
At room temperature of 20°C and 60% RH, Iceberg Lettuce may only last 2 days.
