Champignon / Agaricus bisporus

Description: A mushroom is a fungus, a so-called spore plant, and is therefore not a vegetable although it is generally referred to as one, unlike vegetables mushrooms are not able to produce their own organic matter and feed on left over organic matter on host plants.

Keeping Qualities:

Ethylene: During the natural ripening process, Mushrooms produce fairly high amounts of ethylene. However, the aging process of mushrooms is not really affected by exposure to Ethylene gas.

Moisture Maintenance: Approx. Water Content: 91.5 %
Through maintaining a cool and moist environment it is possible to maximize shelf life.

The ideal storage conditions are 90-95% RH @ 0°C where the mushrooms should last up to 7 days.
At room temperature of 20°C and 60% RH mushrooms are likely to last not much more than just a day.
