Description: The potato is native to northern South America where it has been cultivated for several thousand years. It demands a specific climate for growth. It is important for sales that potatoes are free from mechanical damage, bruises or other defects, external as well as internal. They should also not be affected by greening or sprouting nor bear signs of disease, rot, mould, or pests.
Keeping Qualities:
Ethylene: During the natural ripening process, Potatoes produce small amounts of ethylene. However the aging process of Potatoes can be accelerated through a small exposure to ethylene.
Moisture Maintenance: Approx. Water Content: 76%
Through maintaining a cool and moist environment it is possible to maximize shelf life.
The ideal storage conditions are 95-98% RH @ 4°C where the Potatoes could last up to 240 days.
At room temperature of 20°C and 60% RH the Potatoes may last only about 20 days.
