Peche / Prunus persica

Description: There are a few thousand varieties of Peaches. Most of them are downy, but there are some smooth-skinned varieties, which are called Nectarines.

Keeping qualities:

Ethylene: During the natural ripening process, Peaches produce high amounts of ethylene gas. Peaches are very sensitive to ethylene and will ripen quickly if exposed to elevated levels causing the fruit to become soft. Ethylene levels can be controlled in a variety of ways.

Moisture Maintenance: Approx. Water Content: 75%
Through maintaining a cool and moist environment it is possible to maximize shelf life.

The ideal storage conditions are 90-95% RH @ 0°C where the fruit should last up to 14 days.
