Description: The Plum is a stone fruit. There are many varieties plum in various colors, shapes and sizes.

Keeping qualities:

Ethylene: During the natural ripening process, Plums produce high levels of ethylene gas. When plums are exposed to elevated levels of ethylene gas, ripening is accelerated. This causes softness of the fruit and a color change. Shelf life will also be reduced.

Moisture Maintenance: Approx. Water Content: 79%
Through maintaining a cool and moist environment it is possible to maximize shelf life.

The ideal storage conditions are 90-95% @ 0°C where the fruit should last up to 20 days.
