Strawberries

Fraise / Fragaria X ananassa Duch

Description: The origin of Strawberries is unknown, as wild varieties are found in almost all parts of the world. As there is a large number of varieties, Strawberries may be cultivated under various climatic conditions. The plant does not require pollination.

The Fruit, or Strawberry is not a true fruit in the botanical sense, since it consists of the swollen receptacle on the surface of which are embedded the numerous seeds (achenes), which are in fact the actual fruit.

Keeping Qualities:

Ethylene: During the natural ripening process, a Strawberry produces negligible amounts of ethylene. The aging process of Strawberries cannot be accelerated through exposure to ethylene.

Moisture Maintenance: Approx. Water Content: 89%
Through maintaining a cool and moist environment it is possible to maximize shelf life.

The ideal storage conditions are 90-95% RH @ 0°C where the Strawberry should last up to 5 days.
At room temperature of 20°C and 60% RH, Strawberries may only last a day.

Sensitivity Factors scale: 1-3 (3=very sensitive)
Temperature 2
Relative Humidity 3
Sensitivity to Ethylene 2

Weight Loss Graph: This graph shows how the product looses weight as it looses water when stored in a normal refrigerated environment of 5°C as opposed to one that is humidified to 95% RH.
